This is actually a lunch made by leftovers! As I’m traveling to Japan tomorrow I needed to empty my fridge…

As I happened to have some nice deboned chicken leg, a slice of foie gras and a tiny piece of black truffle it all turned out as a ballottine of the former with rösti then smothered in an utterly decadent foie gras velouté. The présentation might not look that elegant, however it turned out bloody tasty, finally not bad for leftovers!
